Create Magic Inside the Lunchbox!

Making the lunchbox fun and healthy at the same time is an all-time tricky job. It needs both planning and preparation to make the meal satisfying, interesting and definitely good for health. Here are some easy lunchbox recipes with Purabi paneer that will serve the purpose of the busy ladies out there.

Paneer Cutlet:

Ingredients:

  • Purabi Paneer-200 g
  • Potato (boiled) -1 (large)
  • Bread -1 piece
  • Onion -1 medium (finely chopped)
  • Green chilli -2 (chopped)
  • Chopped coriander leaves/pudina -2 tbsp
  • Powdered spices- 1 tsp each
  • Garam masala, Coriander, and cumin powder
  • Bread crumbs -1 cup
  • Salt to taste
  • Oil to shallow fry

Method:

  • Grate paneer finely in a bowl and add mashed potato.
  • Trim the edges of the bread and add to the paneer-potato mix.
  • Now mix all the ingredients to the mixture except oil.
  • Make medium thick patties from this mixture.
  • Shallow fry these patties in a pan using few oil drops for each patty.
  • Pack them in aluminium foil. Pack them as companion for bread butter/jam.  

Paneer Pasta

Ingredients

  • Cooked pasta - 1/ 2 cups
  • Purabi Paneer - ½ cup
  • Onion - 1 medium
  • Tomato - 1 small
  • Carrot - 1
  • Ginger and garlic - 2 Tbsp finely chopped
  • Tomato sauce 1 tsp
  • Chilli powder/flakes - ½-1 tsp
  • Garam masala- optional
  • Salt to taste
  • Oil - 2 tsp
  • Butter
  • Coriander leaves

Method:

  • Heat oil and butter in a pan and add ginger and garlic.
  • Stir a little and add all the vegetables.
  • Add chilli powder/ flakes, garam masala and salt. Mix well.
  • Add paneer and combine everything. Add tomato sauce and some water.
  • Mix well and add pasta. Cook for some time in low heat.
  • Pack in lunchbox and sprinkle a few coriander leaves. 

Paneer Frankie

Ingredients

  • Purabi paneer – 200 gm
  • Vegetables- Onion, capsicum and tomato
  • 4/6 tawa roti/ paratha
  • Thick tomato ketchup
  • Mayonnaise (optional)
  • Lettuce (optional)

Method

  • Make the whole-wheat roti or paratha as usual and keep them aside.
  • Heat oil in a saucepan and add the capsicum and onion.
  • Add thick tomato ketchup and paneer pieces and mix everything well.
  • Season with salt and other spices. Add mayonnaise. Switch off the flame.
  • Spread the aluminium foil and place the roti/ paratha over it.
  • Place the lettuce evenly and add two tablespoons of the paneer filling.
  • Roll the paneer frankie tight and fold the ends tightly in the foil.

#PS: Adjust spices accordingly if cooking for kids.
